Pizza

Ralph Pisani

Dough:

5 lbs. unbleached flour
1 pkg Fleischman's Yeast
(dissolve the yeast in warm water -- should look like milk)
Handful of salt

Slowly add warm water to the mixture while rotating the dough.

The final consistency should be sticky.

Cover with a damp towel and allow the dough to rise. Hint: put wax paper between the dough and the towel so the towel doesn't stick to the dough.

It should take the dough several hours to rise. You can speed up the process if you know how to rise the dough in an oven.

Sauce:

crushed tomatoes
oregano
salt
pepper
romano grated cheese
olive oil

To make the pizza:

Use about one-third of the dough and roll it out to form a pizza.

Spray the pizza pan with a non-stick cooking spray. Or, you can pour a little olive oil into the pizza pan and spread it to cover the entire pan.

Place the pizza dough into the pan and top it with the sauce.

Sprinkle some salt, pepper and oregano.

Generously drizzle olive oil on top.

Bake at 450 degrees until the crust browns underneath.
